Wake at Eight,
I’m running late
Pen, lighter cork-screw in hand
I arrive on time – thank God
being late is banned

Proceed to set-up
My beautiful Bars
Juice , fruit and stock-up
Ready for 11.30 –
Must check the Cigars

Attend the Brief – we taste some wine
Uniform check – I’m dressed in black
It’s way too early – but the Malbec is fine
No time for breakfast – just time to snack

Our first arrival – a regular Mr Kline
Sits down on table 20
A large millers gin and tonic
With an extra wedge of lime

The restaurant is filling nicely
The orders come thick and fast
Mojitos, martinis and caipirinhas
Made the gaucho way – prepared precisely

Time for wine – with beef to die for
The whats – why’s and the where-for
That Malbec with this
This Cabernet with that
It’s a combination of tannins – and flavour from fat

Sounds gross – I know
But our training is terrific
Gives you confidence to grow
When you know all that’s scientific

Our trainers are all gurus
They really know their stuff
From beef and wine to cocktails
Argentina this and Argentina that
At times it can be tough

But being on time – I’m glad
I really like this feeling
Great times with friends and guests
I like the freedom –
that’s what I find appealing
